Best way to change brake pads on VW jetta?

Hi, i have a 2006 VW Jetta (wolfberg model). when i took my vechicle a week back for service( it was a VW dealer and VW service center too), they said its time to change my break pads, as only 1mm is left. But the cost is 500$. Dealers charge way too much and franchised shops many times hire poorly trained "mechanics" whose primary job is to sell you more services whether you need them or not.
